Even though Coco and Colette's "official" reason for their Chicago trip was holiday shopping, there's nothing the girls love more than to get gussied up and visit the most celebrated places. So, of course, they wanted to visit Aviary.
Coco had an "in" for a last minute table because she spent the World Cup summer working at The Scottish Arms, which is where she made the acquaintance of a cutie named Miah who is now the service manager at Aviary. Coco made a big fuss about Miah's cool beard, and as a result, they became good friends, so she called him up and arranged the girls' visit to his new gig at Aviary on Saturday night.
Upon entering, the girls thought they had been transported into the future. The bar-chefs were like scientists performing chemistry experiments, and the girls noticed a fog billowing out of a shaker from the chef who was freezing ginger juice for a version of the Moscow Mule, Miah told them. Colette whispered to Coco, "I wonder if they serve food pellets, like NASA." Coco whispered back, "No, just small plates, like Spain."
After oogling the "cage" that separates the patrons from the chefs and learning that the Aviary has it's own "ice chef" whose job it is to create the most perfect, most crystal clear ice from water imported from Scotland, they settled in. Colette ordered some lobster and brioche bites because some reviews called them "heaven on a plate," and Coco ordered the pork belly just for fun. Colette enjoyed the Aviary's famous Jungle Bird cocktail which is layered tropical deliciousness among spherified rum balls. Coco enjoyed the Cranberry which was served in a porthole and was accented with hints of allspice and lemon. The fancy bevvies were beyond unique; Disney World has nothing on Aviary as far as magic is concerned.
As the girls sipped, they made eyes at handsome strangers and talked about how no cocktail will ever compare to the Aviary's for the sheer experience of the whole thing. As they posted pics of their drinks and plates on Instagram, they were surprised that the Aviary's famous Strawberry desert was delivered with an anonymous note. It read, "It would be our honor to treat you girls to champagne at Pops on Sunday at 9. Hope you like jazz." The girls, of course, blushed and giggled as they scanned the room. Two handsome gentlemen gave a quick nod and wave as they left. Coco was rather firm in her reaction, "Oh, Colette, we're sooooo going to Pops!" And with that, their next adventure was booked.
The Aviary is magic, indeed.
