When Coco had to meet with her editors in New York, Colette pleaded that they make reservations at Balthazar, the famous French Bistro on Spring Street. She'd read a review which called it "exhilirating" and couldn't wait to see for herself.
They wore their finest, boldest ensembles and were stars of the show, especially when their fruits de mer arrived. The girls nibbled gracefully and sipped their Bollinger Brut which had been sent with compliments from Coco's editor.
The girls lingered after their meal, taking it all in and feeling very special. Colette wanted a keepsake, so she bought a cookbook and asked the waiter if he could smuggle the book to the kitchen for the chef's signature. The girls nearly fainted when Shane McBride himself visited their table and thanked them for complimenting the meal. He even gave them a signed copy of the menu to take home.
Coco and Colette agreed that it was the most special dining experience of their lives.
